Coca-Cola Cupcakes
An overwhelming urge to bake something came over me last night - despite the back-ache and my large lumbering lumpiness - I just HAD to bake something........
I guess this nesting lark takes all manner of forms!
Also the need for something sweet, sticky and chocolatey was quite all consuming and the packet of dark cooking chocolate didn't look all that tempting in it's raw form.
Nigella to the rescue! She always comes up with the goods when it comes to comfort food and she didn't disappoint this time.
Unless you had known what these dark little chocolate treats were called I don't think you would have known that they had coca-cola in them. A deceptive addition.
They are supposed to have those fizzy cola bottle sweets on top instead of a lump of chocolate - but that would have been a bit of a give away and besides I didn't have any to hand - who does?
These are very light tasting chocolate sponge cakes with incredibly gooey chocolate icing - highly recommended by very pregnant ladies and their not so pregnant husbands :-)
